The uniqueness of our territory, Tirso Valley, with its particular characteristics, is able to generate excellent wine products like our Sardinian (Italy) Vernaccia Wine Vinegar, aged for more than three thousand days in outdoor chestnut barrels. Vernaccia is a special Wine Vinegar obtained from vines cultivated in the Tirso Valley area and obtained from the acetic fermentation of Vernaccia wine. Acetification occurs by the use of acetic bacteria that convert alcohol into ethyl acetate in the presence of oxygen. Bennaxi Vernaccia Wine Vinegar contains no added sulphites or preservatives and does not follow any kind of industrial process.
Complexity of taste
As for aging, we use Sardinian old casks of chestnut built with fine slats and kept outdoors under a roof. The time runs and the vinegar is poured into other barrels starting from the larger ones, then to the middle ones and finishing in the smaller ones.
